在得利工業中心的新春聯歡酒會上,我遇到了麥先生和他的夫人,他是勝利火腿廠的執行董事,勝利火腿廠佔有香港火腿供應市場的1/3他的公司每天生產約30噸火腿,他們購買後腿豬肉,浸泡12個小時之後將它們蒸熟。在切片之前先冷凍。我向他表示,在不久將來希望有機會參觀一下他們的廠房和製作工序。

Spring Dinner of the Incorporated Owners’ Committee of Tak Lee Industrial Centre
At the spring dinner of the Incorporated Owners of Tak Lee Industrial Centre, I met Mr. and Mrs. Mak.  Mr. Mak is the managing director of Victory Ham which is responsible for supplying 1/3 of the ham in the Hong Kong market.  His company manufactures about 30 tones of ham per day.  They acquire the hind pork and process it by marinating it for 12 hours, then steaming it till it is done.  Finally it is chilled before slicing.  I said to Mr. Mak that it would be of great interest to me to visit his factory.
